Herbal Honey

High quality raw honey mixed with medicinal herbs. Honey is itself an amazing substance full of goodness. Some people tend to see it as a simple substitute for sugar but unlike sugar it is not just empty calories. It’s sweetness plus goodness making it ideal for those of us cursed with a sweet tooth. If you’re gonna do it, do it right.

In a spoonful of honey there is sugar, water, minerals, amino acids, enzymes and pollen. And every honey is unique as it contains the volatile organic compounds from the particular flower nectar the bee collects. And each flower produces different volatile compounds depending on the soil composition it grows in. Variety in abundance. Provenance of the honey is very important in this world where profit trumps morality so I take care to try to source pure raw honeys. I can’t afford to test it myself to be sure but I taste each honey I buy to try to detect any adulteration and I am careful to purchase from reliable sources. The ideal is to buy locally from a known producer but some of the best honeys are produced in faraway climes e.g. the Baltic wild honey I buy where I can get honey from bees that have fed on buckwheat or limeflowers.
